Eggitables
A few days ago, I tried this recipe and it turned out to be a huge success. It's a healthy filler recipe and a MUST try. Special secret about it is that I invented this one!
Ingredients:
Open your refrigerator & grab the following things:
- Chicken - 1 small piece, boiled
 
- Carrot - 1 (peeled and cut them round)
 
- Potato - A half, finely grated
 
- Peas (Optional) - Half a cup
 
- Onion - 1 (small finely chopped)
 
- Eggs - 2
 
Some things more that you will find in your kitchen:
- Salt - To Taste
 
- Black Pepper - To Taste
 
- Soy Sauce - To Taste
 
- Mint - Half Teaspoon
 
- Green Chillies - 1 to 2
 
- Mayonnaise - As Desired
 
- Oil - 1 tablespoon (For Frying)
 
Method:
- Boil the peas.
 
- Take some oil in a pan. Don’t use excess oil. Slightly fry the carrots until tender.
 
- Add Potatoes, then boiled peas, shredded chicken and onions.
 
- Add Salt, Black Pepper and 1 teaspoon of Soy Sauce and fry till you smell the aroma and you know its cooked.
 
- Now add mayonnaise into this mixture and keep it aside.
 
- Now grind the mint leaves and chillies to form a paste. Use more than a pinch (half teaspoon would be enough).
 
- Beat the eggs and add the mint paste into it with some salt and black pepper. (I added some chat masala in it too).
 
- A small amount of oil into the pan once again. Put the eggs mixture into the pan in such a manner that it spreads to the edges to form a thin plate.
 
- Fry till half done.
 
- Now put the mixture we made before over half the portion of the cooked eggs and cover the mixture with the other portion making the shape “D”.
 
- You may add cheese before turning over the other half portion. That makes the eggs to stick with the mixture well. However, it’s totally your choice how you want it.
 
- Cook from both sides for a few seconds.
 
- Serve with Chilli Garlic Sauce and Fries.
 
- I’m sure you will love it for breakfast or any time you feel like munching something.
